SORBIT-MS is a modified Acetylated food starch derived from Tapioca / Potato. It is a cook up starch mainly used for thickening and stability. It gets gelatinized at low cooking temperature. It is used to impart internal bonding strength and texture. It can also increase crispiness and reduce moisture loss.
